    Vilca balls - an award winning energy ball recipe


    As I type this sentence, we are now well and truly into my Raw Food & Soul Adventures Retreat in Vilcabamba, Ecuador. 

    Every day has been jam packed with adventure, workshops, excursions, laughter, detox, yoga, meditation and food, glorious raw food!

    Something in particular, which was a heap of fun for everyone- also happened to be the activity during which I came to the conclusion, that we have a group of creative geniuses on our hands…

    An energy ball competition!

    First, I had everyone pull a team name out of a 'hat'. 
    Teams were either Macadamia, Pumpkin Seed, Walnut, Sunflower Seed, Almond or Brazil Nut.



    Then I introduced all the ingredients that everyone would get the chance to play with. These included everything from Goji berries and Dates, to a whole variety of Superfood powders, like Baobab, Acai, Spirulina, Barley grass, Violet Fig powder, Raspberry powder and about 15 others. 



    They were to be judged on taste as well as presentation and everyone was encouraged to forage through my parents' garden for decorations.

    The teams then presented their recipe to the group.


    And then everybody tasted and casted one vote for the best decorated plate and one vote for the best tasting ball:


     I'm only glad I didn't have to make that decision, I would've struggled big time! Just take a look at all the creativity that went on:







    I've no idea how they managed to choose with all that variety, but we had a clear winner on all accounts:



    The gorgeous Sue, Suzanne and Bill wowed all 17 participants with their taste pairing. And luckily for us, they were only happy to share their 'Vilca Balls' recipe with Better Raw readers too!

    VILCA BALLS
    Makes 30 small balls

    1 1/2 cup pumpkin seeds, soaked 2-8 hours
    1 cup sesame seeds
    1 1/2  cup dates, soaked 2-8 hours
    1/2 cup cacao powder
    1/2 cup Goji berries
    1 Tbsp Acai berry powder
    2 Tbsp Spirulina
    Desiccated coconut for rolling in

    -Put all the ingredients, apart from desiccated coconut, into your food processor and process until well combined.
    -Roll into equal sized balls and coat in coconut.
    -Serve right away or dehydrate for 5 hours so they last longer and get a dense chewy texture.

    Secret Project Better Raw + Chocolate Fudge Recipe



    If you follow my work on either Facebook, Instagram (@betterraw) or Twitter, you are probably well aware that I'm planning something pretty big. Now I know that I haven't exactly revealed what it is yet and I'm going to keep you guessing for a bit longer, but just know that it is going to be EPIC and you are going to love it!

    Keylime Pie volcanoes with Raw Chocolate lava and dehydrated lime slices.

    Raw Food Five Layer Lasagna

    Mushroom Jus, Caramelised Onions and Raw Food Onion Bread cubes.

    Ginger Crunch Cookies and Chocolate Fudge Balls (see recipe below)

    If there was a single common interest my tribe and I share (and of course it's a tough choice, because there are thousands), then it has to be our appreciation for real chocolate! I already know that you'd be keen to find out the recipe for the creamy fudgie truffles above :) I love you, so here you go…


    CHOCOLATE FUDGE


    1 cup sunflower seeds, soaked 2-4 hours
    1 cup pitted dates, soaked 2-4 hours
    ½ cup cacao butter, gently melted
    1/3 cup coconut butter, gently melted
    1/3 cup cacao powder
    1 tsp cinnamon
    Pinch salt
    Cacao nibs

    -Gently melt the cacao butter first. I either grate the solid block of butter and melt in a double boiler with really warm water underneath or roughly chop the butter and place in the dehydrator for 60 minutes at 105degrees F.     -Put all the ingredients (apart from cacao nibs) into a blender and blend with a tamper or by pulsing, until creamy.

    -Chill the mixture in the fridge for 3 hours, then roll into truffle sized balls, coat them in cacao nibs and serve.

    Since January of this year, amongst all other major life commitments like planning a wedding, running online programs, writing my first hard copy book, writing another eBook, launching my new alkalising superfood product- pH booster, organising my first Raw Food and Soul Adventures Retreat in Ecuador, and planning the biggest project of my life's work (to be revealed soon), I have also been studying at The Institute for Integrative Nutrition.     Meet the Better Raw team | Green Warming Wintery Porridge Recipe



    What a week it's been! With Kiwi friends visiting London and other Kiwi friends getting ready to move back home, it's been a wild affair of busy-ness and reflection, this past week for me.

    I can hardly believe how much is accomplishable in just 7 days, but by far my highlights have been:

    1. Watching Elliot receive his Lordship title on his Birthday (see photo),
    2. Having an 'Iconic London' photo shoot with the amazing Samjhana Moon (more on this soon),
    3. Running my favourite class 'Raw Food 101' just yesterday (see photo), and
    4. Capturing this picture in my own lounge:




    It literally flooded every one of my cells with so much gratitude, it's not even funny.     GREEN WARMING WINTERY PORRIDGE
    Serves 2



    3 apples
    1 medium carrot
    1/4 pineapple
    1 inch ginger root
    big bunch kale (about 100g)
    3 cups jumbo oats
    optional toppings: fruit, desiccated coconut, goji berries, etc

    - Slice all your fruit and and veggies to prepare them for juicing.
    - Feed them through the chute of your juicer and stir the juice.
    - Mix the juice with oats in a large bowl and leave aside for 10-20 minutes to soak up the liquids and soften into a porridge.
    - Serve with fresh or dried fruit.

    Tanya's Top Tip: this recipe is best prepared with fruits and veggies which have been kept outside of the fridge for 24 hours. They would be at room temperature and contribute to creating a 'warming' porridge.
