    Better Raw in Simply Beautiful magazine [October Issue 13]



    Hello beautiful people!

    This month I had an amazing privilege being interviewed by Simply Beautiful magazine and I guess what!?.. They asked all those questions, that you too have been asking!

    Three Course Family Meal (feat. Raw Food Lasagna of Rome)



    Exactly three weeks ago today, my sissy (Alissa Alekseeva) and I landed in a beautiful ancient oven, called Rome.

    My lord it was hot. But we are Russian to the core and Russians do love their saunas. So we of course had the time of our lives!


    I just can't believe we only went for three days, they seriously flew by. I completely underestimated the size of the city, not to mention the fact that Vatican City alone could easily take up three days of your time.



    The Sistine Chapel brought up some emotions to the surface, as I rekindled the good old school days and my inner geek for Art History. Man that Michelangelo was awesome, I wonder if whilst painting the ceiling he prefered giving high fives or low fives?



    The highlight of our 'blink' vacation was hands down St. Peter's Basilica. There was something too special about it. I'm very sensitive to energies within church's, but this one clearly was no ordinary church. The headache I had all day long was gone within minutes upon entering, and both my sister and I agreed, it was as though we were floating.



    If you are planning a trip soon, don't miss an opportunity to get up the Dome of St Peter's Basilica. This was another extaordinary experience with insane views. Also make sure you do something random like visiting the Secret Keyhole. I won't tell you anymore, its a secret :) But so worth it. Thanks Britney Brix for the best suggestion ever!


    Ok so by now, you are probably wondering about food right? Surely. You may have seen me mention this on Facebook:"What I learned about eating in Italy: being vegetarian is almost inevitable, being vegan is super easy, being raw is totally possible!" So true. I'll be posting pics to the Better Raw Facebook page soon so you get to see it all! I even found green smoothies in a supermarket!

    You'd always know how good of a get away I had if it inspires me to create a raw meal like the culture. Here's the result:

    Entre: nut balls, crackers and bites

    Main: Raw Food Lasagna

    Dessert: Strawberry Cheesecake

    I've always had this notion that making a raw lasagna should take a massive amount of time and just left it to the full time chefs in raw restaurants. All those layers, all that soaking, all the chopping and the blending and the marinating. Not the kinda talk you expect to hear from a Raw Food Coach hah?

    Well I am a busy woman and as much as I love the kitchen and playing with food, I simply don't have the time for gourmet meals every night of the week. So I was determined to make this one a 'fast meal'...

    You may not think so seeing all the listed ingredients below, but it really is very simple to make and took me less than an hour! Now can you make a cooked lasagna in less than an hour? Well this one doesn't even compare, so forget I even said that :)


    RAW FOOD LASAGNA OF ROME


    For the essentials
    Deep dish ( I used 26 x 18 x 6 cm)
    Blender
    Mandolin/ good knife

    For the mushrooms
    3-4 Portabella mushrooms
    3 Tbsp Tamari Soy Sauce
    2 Tbsp Apple Cider Vinegar
    2 Tbsp Olive Oil

    For the lasagna sheets

    2 large zucchini
    Extra Virgin Olive oil

    For the Cheese layer
    1 Cup Brazil nuts
    1 Cup Cashews
    2 Lemons, juiced
    1 Cup Fresh Basil
    5 Garlic cloves
    water to cover

    For the Tomato Paste layer
    2 Cups Sundried Tomatoes, soaked in warm water
    2 Large Fresh tomatoes
    5 Pitted Dates
    2 Tbsp Herb mix incl. Basil, Oregano, Thyme, Rosemary, Sage, Parsley
    1 tsp Salt (only in sundried toms haven't been preserved in salt)

    For the Extras
    1 Red Capsicum
    1 Large Tomato
    Pine nuts
    Basil to garnish

    -Unless you have given yourself plenty of time for preparation, make sure you start in the order I've listed to get the lasagna done in an hour
    -Peel and thinly slice the mushrooms, mix with all mushroom marinade ingredients and set aside

    -Use a mandolin on the smallest setting to slice the zucchini very thinly into long flat sheets. Alternatively use a knife. Spread a pile of zucchini slices on a separate plate, brushing each side with olive oil and set aside to penetrate and soften

    -Put all the Cheese Layer ingredients (apart from Basil) into a blender and pour only enough water to cover everything. Add the fresh basil and blend until smooth. You may also do this in the food processor, as some may prefer a chunky bite. Set aside

    -Roughly chop tomatoes for the Tomato Sauce Layer and put them as well as the remaining ingredients into the blender. Blend.

    -For the extras, thinly slice the capsicum and tomato

    -Layer as you wish or follow my pattern from the picture below. Either leave at room temperature until guests arrive or serve right away. Slice with a sharp knife while the lasagna is still in the dish and scoop out each slice with a spatula. Sprinkle with pine nuts and a basil leaf garnish

    Eating New York (Raw Food style)

    New York New York. How easy it is to love you. If only walking through your streets and taking in all those sights we recognise so well from the TV screen wasn't enough, you being my sister's home makes this love unconditional.

    To me best thing about New York is that there really is something for everyone. I could turn this statement into a very thick book, but I'll get to the point here... New York is a raw foodie playground! Are you surprised? Just take a look at what my sis Alissa Alekseeva and I have been eating on my recent visit...

    Thanks to my virtual buddy and resource guru Robyn from Girl on Raw, we discovered Liquiteria in Manhattan...
    I had a Skin Trip Juice with carrot, spinach, cucumber, parsley, aloe vera and liver kidney lymph detox. Alissa had an Immune Rocket Booster Juice with carrot, celery, beet, ginger, flax seed oil and immune system tonic

    Lunch, thanks to my sister's Brooklyn bestie Ginger's recommendation was at Quintessence in Manhattan. I will fly back to New York any day just to eat their food again 

    We opted for the Lunch Combo option, as you get this delicious Apple cider made of freshly squized apple juice, date syrup and Christmassy spices

    This is an appetizer Taco of crisp corn tortilla filled with mock refried beans, guacamole, cashew cheese, 'sour cream' and lettuce, erved with guajillo chili sauce. Totally divine. Totally recommend.

    And here is lunch... This one is Indian Delight of Mali Kofta over marinated veggies with almond curry sauce. Heaven. I must admit even though we all shared, this is the dish I would've been more than happy NOT sharing. The textures and flavours went together so well, I wish I tasted it more consciously to work out what all the ingredients were so I can attempt at recreating it at home.

    Portabello Sandwich had marinated portabello mushroom, avocado, onion, tomato, lettuce, cucumber, chipotle cheese sauce and sprouted kamut bread. So simple, yet so incredible especially with that tangy 'secret' green dressing.

    Now THIS one is Ravioli. The filling was made of basil "cheese" and wrapped in jicama. I was happy to finally taste jicama, as it is not available in UK and concluded that it reminds me most of Asian pears. This dish was topped with rich tomato Napolitana sauce and served with yellow squash pasta. The parmasan looking cheese is (and this is only my guess) was a combination of crumbled almonds, nutritional yeast and spices. Wow wow wow

    Next Stop was a must to check out where my sister works. Thompson Hotel is absolutely stunning, every detail of its interior had New York written all over it. Eye candy.

    Alissa even jumped behind the bar on her day off to make me her specialty 'Tanya friendy' cocktail she created...

    The beautiful red one you see, she named 'The Rose', it had wild flower tea mix with agave, bio dinamic Pinot Noir and organic gin. The green cocktail is called Emperor Martini and has lemon juice, agave, cucumber, shiso [Japanese] mint and cucumber infused gin.

    We were still waaaay too full from lunch, but I wasn't allowed to leave without trying my sister's favourite meal from Shang Restaurant by Susur Lee (at Thompson Hotel). This Singapore Slaw was a delicious tower of 18 ingredients including carrot, picked ginger, baby cilantro, jicama, cucumber, peanuts and edible flowers.

    Rockin' Raw in Brooklyn was another experience to keep us going for an entire day...

    Fully Loaded Nachos were insanely good. I am pretty sure even the meat eater wouldn't know the difference if they weren't told. The seasoned flax chips were 'fully loaded' with seed meat, sour cream and nacho cheese.
    And just take a look at this Lasagna! What a clever dish of flavour. It had layers upon layers of zucchini, mushrooms, marinara, nut cheese, herbs and spices

    BBQ Eggplant Cream cheese wrap of breaded seasoned eggplant with 'bbq' sauce, cream cheese, greens, in sun-dried tomato wrap served with marinated plantains. The plantains were unbelievable, just like stringy melted cheese, but oh so much better.

    I really don't know how we managed it, but we did fit in cocktails for desert. When I see something with peppermint on the menu, it may as well read 'Tanya Alekseeva'. I got a Peppermint Twist with cacao, peppermint, agave and coconut cream. Sis went for a Lavender Courtship with lavender infused water and vanilla.

    This little cutie is a nut free cookie, that we ordered for desert as well. There was no way we could manage though and saved it for breakfast. Best decision ever! Breakfast never tasted as good as these raspberry, cacao and coconut flavours in one creamy chewy cookie. Mmmm

    biking all over
    
    Sun in Bloom was very much a worthwhile destination on a pretty street in Brooklyn surrounded by boutique shops. It had a real fresh feel to it with alot of space and lots of light. I especially loved their bookcase with every Raw Food book that's been published.

    Kombucha was so so good after the long bike ride to get here

    This soup of the day was really something else. Romaine, parsley, cucumber, avocado, lemon and garlic. I am pretty sure that if I remembered my dreams, I'd know this is the soup I dream about

    Sunny Couture Futomaki - an aphrodisiac blend of dehydrated vegetables, avocado, romaine, sesame ginger dressing wrapped in Nori. It did come with brown rice, as apparently we had to specify if we wanted Raw or simply Gluten Free. Will know for next time

    Raw Star NYC was a really pleasant surprise in Brooklyn with the most relaxed atmosphere, had really nice decor and a super mouth watering Carribean raw menu
    We started with a Green juice of celery, lettuce, parsley, lime and everything else green in season

    Crackers and cheese were A-mazing! Simple crackers of pumpkin seeds and flax went so well with the cheese made of cashews, pineapple and red bell peppers. I can't believe I never made that combo before

    Sea vegetable salad was very nourishing amd totally satisfying at the same time. There was nori, arame, wakame, hijiki, dulse, cabbage and red onion drizzled with a creamy mild spicy sauce. I loved that this was not your typical 'mock something' raw dish. Recommend!

    Pure Food and Wine was a stop for cheese crackers and desert with my oldest friend in the world! Beautiful Anya and I grew up together in Russia, since our parents have been friends forever. I got to meet her awesome husband Kevin too. Oh how I didn't want the night to end!
     This one is a fancy plate of assorted cultured Dr. Cow Tree nut cheeses, rosemary crackers and mustard greens

    Panacotta made of passion fruit, mango pulp, coconut meat and coconut butter accompanied by dark chocolate icecream with caramelised cacao nibs. I feel pretty confident adding this one to my Top 5 Deserts. Yep done!

    Well I don`t know about you, but I am certainly salivating now that I put all the pics together. It is 11.11PM in Vilcabamba, Ecuador and I am about to go rummaging through my parents`pantry and fridge...

    I just received the Funky Raw magazine in the mail and guess whose article is published! Pretty exciting stuff, as I absolutely love this sweet and cherry positive-living mag and this edition being the first for 2011 is an especially good read...

    Not just because it has my TEN WAYS TO GET DETOXING TODAY article (hehe) but it contains many many inspirational stories, book and restaurant reviews, cartoons, helpful tips, news, upcoming events and recipes. It is a very enjoyable read and you can get your copy here






    Now that we are on the topic of publications and reviews, there is another article I have been meaning to share with you since the day it came out!

    Tacita Vero from BLUE TOMATO magazine attended one of my Raw Handmade Chocolate Workshops at Saf Restaurant and was so intrigued and excited about her latest discovery, she wanted everyone to know and made certain to write a review on the class.

    Here's a snippet:

    RAW FOOD CURRY IN A HURRY


    This one has been a huge hit at my Raw Foods for Winter Classes and it is also included in my book 'Purified- Your Complete 7 Day Detox Program', because of the special cleansing properties contained in the cauliflower, ginger, onion, garlic and cayenne. Enjoy.

    For the essentials
    Food Processor
    Blender

    For the 'Rice'
    1 Cauliflower
    1 Carrot

    For the Curry
    1 Cup Cashews
    2 Tomatoes
    10 Sundried tomato halves (soaked in warm water 10 mins)
    ½ Cup Dried Shredded Coconut
    ½ Avocado
    1/4 Red Onion
    1 inch Ginger
    1 Garlic clove
    2 Tbsp Extra Virgin Olive Oil
    1 tsp Cayenne Pepper
    1 tsp Paprika
    1 tsp Turmeric
    1 tsp Cinnamon
    Water as needed

    For the Optional bites
    Walnuts/ Flaked Almonds/ Sprouts, Fresh corriander to garnish

    -Roughly chop carrots and cauliflower and transfer to a food processor
    -Pulse, until finely diced and resembles rice.
    -In a blender put 1 cup cashews and 1 cup water. Blend really well until creamy.
    -Add all the remaining ingredients (apart from optional ingredients) and 1-1.5 cups water. Blend well.
    -[Note, you may need to pulse to make it easier on your blender or add more water]
    - Serve with either walnuts, sprouts or flaked almonds on cauliflower ‘rice’. Garnish with fresh coriander.
