    Can you believe how close Christmas Day is?

    The idea of Christmas feels especially surreal to me this year, because not long after, Elliot and I will meet our daughter.

    I literally can’t believe I just said that.

    Each time the mini muffin moves inside my belly (ie. all day, every day, each minute, non stop, always), I’m in total amazement at the superpowers of my own body. There’s a real baby in there! Well maybe it’s an alien- it certainly feels like that at times- but then again the other day I felt a teeny tiny foot with five perfect little toes and fell even more in love with this living creation within me.

    So while I hear all sorts of stories about her coming for the world earlier or staying cosy for longer, I’m not going to plan any new workshops till we know for sure…

    That means that THIS Friday's Raw Breakfast Club is not only my final mini workshop for the year, it's the final indefinitely. OMG!

    What's in my pantry

    When you are new to uncooking, not much looks or sounds familiar, and that’s ok- you were once new to cooking too. However as you skim through this list, you’ll notice that not only do you already recognise all the food groups, but that there are more of them than you originally thought.

    Raw foods are abundant in variety. Let this excite you rather than overwhelm you.

    There’s no need to spend a fortune- it’s all about stocking up a little at a time. Begin by adding 2-3 of the below items to your weekly grocery list and you’ll be equipped to make anything in the raw world… certainly anything in The Uncook Book: The Essential Guide to a Raw Food Lifestyle (UK or US).

    Yep your shopping list for the entire 146 recipes is below!

    If you’ve been reading the blog for some time, you’d know that I try my best to stick to the ingredients easily found either in a supermarket or your nearest health store, nothing too crazy. The Uncook Book was created exactly the same way.*

    FRUITS

    Lemons, limes, avocados, apples, oranges, bananas, watermelon, cantaloupe/rock melon, pineapple, berries (fresh and frozen), pears, kiwifruits, nectarines, passionfruit, grapefruit, grapes, papaya, figs, coconut (both mature brown and young green, which are mistakenly categorised as nuts).

    VEGGIES

    Courgette/zucchini, celery, carrot, beetroot, sweet potato, mushrooms (oyster, button, chestnut, portabella, shiitake), asparagus, fennel, sweet corn (fresh, frozen and baby corn), popped garden peas, snow peas, broccoli, cauliflower, cabbage, parsnip, Jerusalem artichokes, butternut squash or pumpkin, and of course tomato, cucumber, aubergine and bell peppers (which are all fruits, but found in supermarket vegetable aisle).

    GREEN LEAFIES

    Kale, cavolo nero, spinach, Romaine lettuce, chicory lettuce, watercress, rocket/arugula.

    HERBS & WILD EDIBLES

    Mint, basil, parsley, thyme, coriander, dill, green onion, chives, rosemary, snow pea and sunflower shoots, edible flowers (fresh and dried pansies or rose petals), micro greens.

    NUTS & SEEDS

    Nuts (almonds, cashews, hazelnuts, walnuts, pecans, Brazil nuts, pine nuts, pistachios), seeds (sunflower, chia, sesame, pumpkin, poppy, hemp seeds (both hulled and in shell) plus buckwheat and quinoa (both of which are mistaken for grains)).

    GRAINS, BEANS & LEGUMES

    Rolled oats (buy ready sprouted porridge oats), sprouted mixed beans and lentils, alfalfa sprouts, bean sprouts.

    SEA VEGETABLES & ALGAES

    Wakame, dulse, nori, kelp noodles, spirulina and chlorella.

    SPICES & FLAVOURINGS

    Himalayan salt, peppercorns, garlic (fresh and powder), onion (fresh white and red onions, scallions and onion powder), ginger (fresh and powder), turmeric, cumin, garam masala, paprika (plain and sweet smoked powder), cayenne, chili (fresh, powder and flakes), winter spices (cinnamon powder and sticks, nutmeg, coriander, star anise, cardamom), mixed Italian and other dried spices (dried basil, parsley, oregano, thyme, dill, rosemary, sage), caraway seeds, wasabi powder, Dijon mustard, vanilla (pod, extract and powder).

    FATS, OILS & BUTTERS

    Extra virgin coconut oil, extra virgin olive oil, toasted sesame oil (not raw, but so good, you’ll eat way more healthy salad with a dash of this), other (caster oil, hemp or flax seed oil), raw tahini, almond butter, coconut butter, peanut butter (not raw, use only occasionally), cashew/macadamia butter, canned coconut milk (not raw, buy only organic with no additives).

    CONDIMENTS

    Tamari or nama shoyu (both are fermented soy sauces), Bragg’s liquid aminos, apple cider vinegar, balsamic vinegar, miso paste (sweet white and dark), nutritional yeast (buy fortified with vitamin B12), sun-dried tomatoes (preferably preserved in salt, but look for quality oil if in oil), olives, tabasco sauce.

    SWEETENERS

    Dried fruits (pitted dates, medjool dates, raisins, apricots, pineapple, goji berries, mulberries, golden berries, and desiccated coconut), maple syrup (not raw, but contains minerals and beautiful flavour), agave (highly controversial, so make sure you know your source), raw honey (minimum of UMF 10+ is best), coconut palm sugar, xylitol, freeze-dried strawberries (or powder), yacon syrup and liquid stevia.

    SUPERFOODS

    Cacao (powder, butter, paste/liquor and nibs), matcha green tea powder, lucuma, maca, bee pollen, acai (powder and pulp), medicinal mushrooms (cordyceps, chaga, reishi), carob, algarroba and baobab.

    OTHER

    Dairy free probiotic capsules, Medicine Flower extracts (coffee, butterscotch or caramel), peppermint essential oil, coffee beans, Assam tea leaves (or English breakfast tea bags), coconut flour (or buckwheat flour), kombucha and rice papers.

     

    *Tanya’s Top Tips:
    #1. The further down the list you get, the more likely these foods are to be found at a health store, not a supermarket. Also check out the Resources section on page 189 for ideas on where I shop, or see some of them here>>
    #2. The foods within each category are listed in order of popularity in my kitchen.
    #3. Always buy nuts and seeds in bulk and store them in the freezer, where they could stay fresh for up to three years.

    Master of The Month | Joshua Rosenthal | Zucchini Pesto Pasta Recipe

    Joshua Rosenthal is my amazing teacher from The Institute for Integrative Nutrition and is a pioneer and visionary in holistic health and wellness. He holds a Master’s of Science in Education and has over 30 years of experience in health and wellness including creation of the concept of Health Coach.

    Long before the benefits of proper nutrition and lifestyle were mainstream, Joshua's fascination with personal growth and development led him to experiment with simple changes to his own diet and lifestyle. Through this process, he realised that food changes everything. He knew that if he could spread this message, he would make the world a healthier and happier place. With this mission in mind, Joshua founded the Institute for Integrative Nutrition 25 years ago.     DESCRIBE YOUR TYPICAL DAY OF EATING AND DRINKING.

    What I eat really depends on how I feel and what season of the year it is. Over time, I’ve learned to really listen and tune in with what my body is craving.  In the morning though, I always start my day with a big glass of water with lemon and a green juice or smoothie.  The next time I’m hungry, I’ll sit down to a big raw kale salad and dinner is usually another plant based dish.  I work pretty much all day long because I’m very involved with each department at IIN.  It’s important to me that they feel supported, so I’m lucky that my partner, Alex is an absolutely amazing cook.  I take breaks so we can eat every meal together.

    WHAT (OR WHO) INSPIRES YOU TO EAT WELL AND STAY HEALTHY?

    Alex, my family, and Integrative Nutrition – its mission, our students, and graduates.  I want to stay healthy so I can be the best version of myself in every aspect of my life.

    WHAT IS YOUR BIGGEST WEAKNESS WHEN IT COMES TO FOOD AND HOW DO YOU DEAL WITH THAT?

    I love chocolate, but I don’t consider it a weakness.  When you start considering foods as weaknesses it creates a dependency on utilizing them as a crutch or reward.  Just like we teach bio-individuality in our program, in my book no food is “good” or “bad”, it’s all about learning what works for you and how to treat yourself when your body is truly craving it.

    MY TOP TIP FOR:

    Improving your diet is… learn how to understand where your cravings are coming from, it’s usually because something else is missing in your life.

    Staying healthy while travelling is… really important, but it’s also important to enjoy what other cultures have to offer. I always look to eat what is fresh and local.

    Detoxing is… A food that feels detoxifying to me may feel toxic to someone else.

    WHAT’S THE NICEST THING ANYONE HAS EVER SAID TO YOU?

    That IIN’s Health Coach Training Program changed their life and the lives of their families and communities.

    HOW WOULD YOU LIKE TO BE REMEMBERED?

    IF YOU COULD HOST A DINNER PARTY FOR 3 GUESTS (DEAD OR ALIVE)- WHO WOULD THEY BE AND WHAT WOULD YOU SERVE?

    To be honest, the best dinner party I can imagine would have all of the people I love most in my life.  When I’m around those people is when I feel most fulfilled, happy, and content.  There’s nothing quite like it.  Alex and I would serve a table of food cooked with love – everything from raw salads with veggies from the garden to grass fed meat bought at the local farm and whole ancient grains.  I would want to make sure there was something for everyone!

    WHY DO YOU BELIEVE THAT LIFE IS BETTER RAW (OR WITH MORE PLANTS IN YOUR DIET)?

    I believe that moving towards a more plant based diet can make people more balanced and vibrant. I tend to eat a primarily plant based diet. However, it’s important for people to keep bio-individuality in mind.  What works for me and what works for you may not work for someone else.  I recommend experimenting with different types of protein and various foods to see how you feel and fulfill your dietary needs based on what you learn and understand that what your body needs day to day can change, and that’s okay!

    Our Master of The Month shares his favourite recipe…

    ZUCCHINI NOODLES WITH PESTO
    Prep time: 10 minutes
    Cook time: 15 minutes
    Serves 2

    zucchini pasta with pesto by Joshua Rosenthal

    3 large zucchini/ courgette

    2 bunches basil

    1/2 cup pine nuts, toasted

    Juice of 1 lemon

    1/4 cup extra virgin olive oil

    1 tbsp sea salt, or to taste

    Black pepper, to taste

     

    · Wash, pat dry, and trim zucchini ends. Create noodles using a spiralizer tool.

    · Option: Sauté your “noodles” in olive oil over medium-high heat for 4-6 minutes. Add salt and black pepper to taste.

    · Wash and dry basil and add to blender with pine nuts, lemon, extra virgin olive oil, and salt.

    · Blend until smooth, adding more olive oil and/or water as needed.

    · Toss zucchini noodles with pesto

    If you have a copy of The Uncook Book at home, it probably doesn't come as a surprise that I love myself a good looking (and hopefully sweet) kinda breakfast.

    You are probably not even surprised that a raw food breakfast can take anywhere between 2 minutes and 40 hours to make. Or that you can still have an oat porridge that is 100% raw.

    As it gets colder here in the UK and my body is starting to long for more hearty, slow energy releasing and grounding foods, it is a bowl of good ol' oat porridge that is the first on my mind. Best thing about this below recipe is that it is just as satisfying and comforting as cooked food, but instead a raw energising breakfast full of enzymes and vitamins.

     

    Raw Caramel Overnight Oats

    Serves 2

    raw sprouted overnight oats recipe 2 cups water

    4 tbsp coconut butter

    6 medjool dates, de-stoned

    1 tbsp vanilla bean extract

    1.5 cups sprouted oats flakes (Rude Health or Planet Organic)

    Optional: maple syrup, mango slices, hulled hemp seeds

     

    - Prepare your breakfast the night before for it to properly soak at room temperature and become extra digestible in the morning: blend water, coconut butter, dates and vanilla till smooth.

    - Stir in the oats, cover with a tea towel and leave to soak overnight.

    - In the morning, distribute over 2 bowls, drizzle with maple syrup, top with mango slices and sprinkle with hemp seeds.
